How to Cook Oven Roasted Turkey

Happy Thanksgiving everyone! I have been using a recipe I found on Clemson University’s website for the past few years (apparently cribbed from Butterball), and added my own touches to make a consistent, delicious holiday bird. The Clemson website also has the best guide for thawing, smoking, stuffing and deep-frying that I have found anywhere, so refer to that site for more help.

This is my recipe to cook the best, picture perfect, oven-roasted turkey for Thanksgiving and Christmas. Enjoy!
Roasting Method Only: The open pan roasting method will consistently create a juicy, tender, golden brown, picture-perfect turkey.
- Place thawed or fresh turkey, breast up, on a flat rack in a shallow pan, 2 to 2 inches deep.
- Remove giblets.
- Using a basting brush, use 1/8 cup of peanut oil to lightly coat the whole turkey. Peanut oil results in a beautiful crispy red skin. If there are peanut allergies, consider olive oil, melted butter or vegetable oil as a substitute.
- Mix and grind together 2 tsp salt, 2 tsp fresh rosemary, 2 tsp cracked black pepper, 1 tsp paprika, 1/2 tsp onion powder, 1 tsp parsley flakes. Sprinkle mixture on oil-coated turkey.
- Insert oven-safe meat thermometer into the thickest part of the thigh.
- Place in a preheated 325 F oven.
- When the skin is a light golden color and the turkey is about two-thirds done, shield the breast loosely with a tent of lightweight foil to prevent overcooking of the breast.
- Use the roasting schedule in the table below as a guideline; start checking for doneness a half-hour before recommended end times.
- Turkey is safe when cooked to a minimum internal temperature of 165 F as measured with a food thermometer. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast. For reasons of personal preference, consumers may choose to cook turkey to higher temperatures
- Let turkey stand for 15 to 20 minutes before carving to allow juices to set.
A word about basting: Most turkeys do not require basting. Constantly opening the oven for basting cools the oven and adds time to the roasting. The turkey will be tender and juicy without basting. You can remove juices during roasting for gravy and stuffing, but basting will wash off the oil and spices.

Thanksgiving Drinks- Turkey and Green Pea Sodas

Two words: Gross. Buckets.
Jones Sodas are the only bottled sodas that you can get in Starbucks. Lots of my friends love to hang out at Starbucks and sip lattes and fraps and pumpkin flavored spicy teas. I hate most coffee and absolutely refuse to pay more than a buck for a cup of coffee anywhere. So when I go to Starbucks to hang out with my coffee addicted friends, I often have to bring my own bottle of soda, which is always Diet Coke.

Now Jones Soda has a new holiday pack featuring sodas flavored with turkey, peas, sweet potato and even antacid.

SEATTLE (Reuters) – After introducing the world to new soft-drink flavours like fish taco and salmon, Seattle specialty beverage maker Jones Soda Co. is offering a new flavour: Green pea.
Green pea, along with other unusual sodas such as turkey and gravy, dinner roll, sweet potato and antacid flavour, will be part of the company’s $10 to $15 “holiday pack” of bottled drinks available nation-wide.
Peter van Stolk, chief executive of Jones Soda, said on Monday the collection of strange-flavoured sodas usually sell out quickly, even though he can not stomach the drinks. Past flavours included broccoli casserole, corn on the cob and Brussel sprout.
“Why people buy it is beyond me. I can’t drink a bottle of this stuff,” said van Stolk.
Jones Soda, which sells traditional sodas along side more exotic flavours like fufu berry and green apple, first introduced the holiday soda pack in 2003, gaining notoriety for its turkey and gravy flavor soda.
“We have the market share leader in turkey-flavoured beverages,” said van Stolk. “We know we can’t compete with Coke or Pepsi by playing their game, but we know they’re not going to come out with a turkey flavour or antacid flavour.”

You want food, right? Good, American food, made the way it should be? I mean real juicy burgers, stacked high, and fries deep fried in lard? And dammit, those burgers and fries should come with a great big beer. And a pack of smokes! And none of that wimpy Marlboro Lights, I’m talking the real deal, the Marlboro Reds baby!

And to top it all off, if you are working on your next heart attack, you may as well be wheeled to the dining table in a wheelchair by a scantily clad nurse in high heels, right? Damn right!

Wild Turkeys are Poor Flyers

Its getting near Thanksgiving, one of Belch.Com’s favorite holidays. And what better way to kick off the season that with a weird story about a reckless bird?

Turkey day came early for one New Jersey family when one of the wild birds crashed through a house window and made a big mess.
The episode began around 3 p.m. Monday when Lisa Lane, her daughter, Lauren, and notably, their West Highland white terrier, Bubbles, pulled up to the house.
About 20 wild turkeys were feasting on crab apples in their yard, not an unusual sight.
When the birds saw Bubbles, they flew away in a hurry. One, though, did not have a smooth takeoff and crashed into a second-story window of the Lanes’ home.
After Lane called for help, state police, an animal control expert and a turkey-hunting neighbor sporting camouflage and toting a baseball bat showed up for the roundup. But by the time the turkey search party arrived in the bedroom of 8-year-old Jake Lane, where the bird had crashed, the gobbler was gone.
But not without leaving its mark.
“The bird had relieved himself all over,” Lisa Lane said. “The room was a disaster.”

Taste of Home Goes to Iraq

This is a great story of a hometown landmark restaurant. A soldier in Iraq, from Newport News VA, whipped out some Pierce’s BBQ sauce at a Barbecue in Iraq. All of his friends were instantly hooked. They sent a call to Pierce’s asking for more sauce, and more is on the way.

I’ve been meaning to get back by this place and have some great BBQ.

The Marines are going to get their barbecue sauce.
Four gallons of Pierce’s Pitt Bar-B-Que sauce might not make it in time for a Marine Corps birthday barbecue Friday, but the yellow-and-orange-labeled sauce is on its way to Al Asad, Iraq, nonetheless.
Pierce’s received an e-mail request last week from a group of Camp Pendleton-based Marines stationed in Iraq. A former member of their unit was from Newport News and pulled out the sauce at a recent barbecue. The Marines were hooked.
The guys of Combat Logistics Battalion 1 liked the sauce so much that Sgt. Wesley C. Brown wrote to the restaurant and asked if they could possibly get some more sent to them. He hoped to have it in time for the Corps’ 231st birthday on Friday.
“The sauce has a sweet kick to it,” wrote Brown, a 29-year-old from Phoenix, in an e-mail. “It is by far the best sauce I’ve had!”
Pierce’s responded with gusto.
“If we can do something to make them feel more comfortable, it’s worth it,” Pierce said Monday. “We’re definitely very proud to do this for them.”
